Sunny Day Lemon Bundt Cake

The old saying, "When life gives you lemons make lemonade," is just fine. But making a lemon cake is even better! The other day I was out in my backyard when I heard my dogs barking inside my house. I went inside, walked to the front door, and found a sack of lemons sitting there!

The lemons were from my friend, Char. Being on lock-down she had placed them in the door, rang the bell, and dashed. I never caught sight of her. But It was such a gray, cold day and the lemons looked so happy and sunny that I couldn't help but laugh. I called Char to thank her for the thoughtful gift, not entirely certain what I was going to do with all those lemons. Certainly, I could use them in my Very Cherry Martinis. Thanks to COVID-19, the depressing weather, and a very personal family loss, I was drinking a lot of them--but not so many that a sack of lemons was needed...hopefully. Then I saw my Bundt pan sitting on a shelf looking very lonely.

I was lonely too and needed a little ray of sunshine. I also remembered that the dear little Bundt cake, a favorite of my mother's, was making a comeback, thanks to a little shop I had recently stumbled upon (much to my husband's chagrin!) called Nothing Bundt Cake.

They're gorgeous, and delicious! But my little Bundt pan was gorgeous too. I'm also writing a bakeshop cozy mystery series (shameless plug here for the upcoming Murder at the Beacon Bakeshop!) and have been thinking about so many different kinds of yummy cakes and bakeshop treats. Staring at the happy lemons and my adorable Bundt pan, I decided to get the zester out and throw down on my own version of a delicious little "Beacon Bakeshop Bundt".

Okay, so I got a little overzealous with the frosting. Also, I was being a little impatient. The cake was a tad too warm when I piped on the frosting. But I have to be honest, the lemon buttercream was delicious. The entire Sunny Day Lemon Bunt Cake was so good, moist, lemony, and bright, that my sloppy frosting was overlooked. That's because it was gobbled up by my husband and sons. My little Beacon Bakeshop Bundt was a hit!


So, if you find a sack of lemons (or just 3) and you're wondering what to do with them, here's my suggestion. Make a Sunny Day Lemon Bundt Cake. It'll put a smile on your face, brighten your mood, and wow your taste buds. And really, aside from a COVID-free world, what could be better than that?
